Oven salmon / sweet potato / Brussels sprouts

Ingredients

 

For the Salmon:

4 salmon fillets with skin

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon Italian herb seasoning

1/2 teaspoon garlic powder

Juice of 1/2 lemon

 

For the vegetables:

4 sweet potatoes chopped

4 cups Brussels sprouts, halved

Salt and pepper

1/2 teaspoon garlic salt

1/2 teaspoon paprika

2 tablespoons olive oil

 

Instructions

 

  1. Preheat oven to 400F and  line three baking sheets with parchment paper.
  2. Arrange the sweet potatoes on a baking sheet. Add 1 tablespoon olive oil, sprinkle with salt, pepper and paprika and toss well to coat.
  3. Place in oven and set a timer for 15 minutes.
  4. Arrange the Brussels sprouts on another baking sheet. Add 1 tablespoon oil, sprinkle with salt, pepper, garlic salt and toss well.
  5. Place the salmon fillets on the third baking sheet. Drizzle with olive oil, then add garlic powder, salt, pepper, Italian herbs and lemon juice. Rub the seasoning over the top of the fillets.
  6. After the sweet potatoes have baked for 15 minutes, place the salmon and Brussels sprouts in the oven and bake everything for another 15 minutes, or until the salmon is cooked through and the vegetables are starting to roast.
