Steak / lentils / veggies dinner

Ingredients

 

For the steak:

2 lbs. flank steak

1-2 tablespoons steak seasoning

 

For the lentil soup:

2 C brown lentils

5 C water

1 C blended tomato

1 t salt

2 t cumin

4 carrots, chopped

2 celery stalks, chopped

1 onion, chopped

5 garlic cloves, minced

 

For the roasted veggies:

1 head broccoli in flowerets

1 head cauliflower in flowerets

1 tablespoon olive oil

1 teaspoon garlic salt

Slat and pepper

A squeeze of lemon juice

 

 

Instructions

 

  1. Preheat oven to Broil
  2. Start by making the soup. If your slow cooker has saute option, first saute the onion and garlic until fragrant, then add all ingredients to the pot
  3. Cook on high for 15 minutes NOTE:  If you don’t have a pressure cooker, you can make it on the stove, it’ll take about 30 min
  4. Place steak on lined cookie sheet and place in oven
  5. For rare steak broil 10-12 minutes. If you like your steak more done, adjust oven temperature to 425 and place back in oven for an additional 5-10 minutes or until desired doneness
  6. While steak is cooking, place broccoli and cauliflower on cookie sheet with parchment paper and add oil, garlic salt, salt, pepper and a squeeze of lemon juice
  7. Take steak out of oven and let it rest on cookie sheet for 5-10 minutes before cutting
  8. Adjust oven temperature to 425F if you haven’t already done so and place veggies in oven
  9. Roast veggies for about 20 minutes, depending how roasted you like them.
  10. Serve everything together and enjoy!
