Maple Chicken and Carrots with Farro

 Ingredients

 

1 Tablespoon fresh rosemary

1 lbs. Chicken breasts

1 lbs carrots, halved lengthwise

2 Tablespoons olive oil

2 Tablespoons maple syrup

Salt and pepper

2 cups cooked farro or any other whole grain

 

 

Directions

  1. Set oven to 450 F
  2. Arrange chicken on 1 sheet and carrots on another sheet
  3. Mix the olive oil and maple syrup and brush the carrots, then the chicken
  4. Sprinkle salt, pepper and rosemary on both the chicken and carrots
  5. Place chicken on upper rack and carrots on bottom
  6. Bake 20-25 minutes until chicken is cooked
  7. Serve alongside a whole grain like farro or brown rice for a complete meal
