Maple Chicken and Carrots with Farro

Ingredients
1 Tablespoon fresh rosemary
1 lbs. Chicken breasts
1 lbs carrots, halved lengthwise
2 Tablespoons olive oil
2 Tablespoons maple syrup
Salt and pepper
2 cups cooked farro or any other whole grain
Directions
- Set oven to 450 F
- Arrange chicken on 1 sheet and carrots on another sheet
- Mix the olive oil and maple syrup and brush the carrots, then the chicken
- Sprinkle salt, pepper and rosemary on both the chicken and carrots
- Place chicken on upper rack and carrots on bottom
- Bake 20-25 minutes until chicken is cooked
- Serve alongside a whole grain like farro or brown rice for a complete meal
