Lentil soup / salad / sourdough bread dinner

Ingredients

 

For the lentils:

1 onion, chopped

5 garlic cloves, minced

2 cups brown lentils

5 cups water or stock

3 cups tomato sauce

2 teaspoon salt

2 teaspoons cumin

4 carrots, chopped

1 bunch kale, chopped

 

For the salad:

4 cups arugula or any other salad greens

Juice of 1/2 lemon

2 tablespoon olive oil

Salt and pepper

 

Sourdough bread loaf

 

 

Instructions

 

  1. If your pressure cooker can saute, place the onion and garlic in it and saute until fragrant (if not, you can do this on the stove)
  2. Add the rest of the ingredients except kale
  3. Cook on high pressure for 15 minutes if using pressure cooker, or 30 min if using stovetop.
  4. While the soup is cooking, make the salad combining all ingredients
  5. Slice the bread
  6. Add the kale once it’s done cooking
  7. Enjoy!!
