Here are some dressings I keep on rotation:

 

Chipotle Mayonnaise

1 cup vegetable oil

1/4 cup olive oil

1 large egg, room temperature

1/2 teaspoon mustard powder

1/2 teaspoon salt

Juice of 1 llime

2-3 canned chipotle peppers depending how spicy you want it

 

  1. In a quart-mason jar place the olive oil, egg, mustard powder and salt
  2. Mix thoroughly with an immersion blender on medium-high setting.
  3. While mixing, drizzle the vegetable oil slowly. The slower you drizzle it, the thicker the mayonnaise will be.
  4. After the mixture has emulsified, add the lime and chipotle peppers and mix on low to incorporate
  5. If you're planning on drizzling it, add water little by little at the end until it reaches the consistency you are looking for

 

Apple cider vinegar dressing

 

1/4 cup apple cider vinegar

1 teaspoon honey

1 garlic clove, minced

1/2 teaspoon dijon mustard

1/2 teaspoon salt

1/4 cup extra virgin olive oil

Black pepper

 

  1. With immersion blender, blend the vinegar, honey, garlic, mustard, salt and pepper
  2. Slowly drizzle the olive oil while blending until the dressing it emulsified

 

Creamy cilantro dressing

1 cup cilantro

1/2 cup yogurt

1 garlic clove

1/4 cup olive oil

4 tablespoons apple cider vinegar

1 teaspoon sugar

Salt and Pepper

 

Blend everything together and voila!
