Cherry Chia Jam

Ingredients
2 cups frozen cherries or pitted fresh cherries
2 tablespoons chia seeds
2 tablespoons lemon juice
1 tablespoon honey / maple syrup / sugar or substitute with stevia/monkfruit
Instructions
- Add cherries to a small saucepan over medium heat
- Cook for about 8-10 minutes, stirring occasionally, until they soften and release their juices
- Mash gently with a fork or potato masher to your desired texture
- Stir in chia seeds, lemon juice and sweetener if using
- Simmer 2-3 more minutes then remove from heat
- Let cool, it will thicken as it cools down
- Keep in the refrigerator for up to 7 days
Goes well with:
-Yogurt and peanut butter
-Cottage cheese
-Spread on bread
