Cherry Chia Jam

Ingredients

2 cups frozen cherries or pitted fresh cherries

2 tablespoons chia seeds

2 tablespoons lemon juice

1 tablespoon honey / maple syrup / sugar or substitute with stevia/monkfruit

 

Instructions

  1. Add cherries to a small saucepan over medium heat
  2. Cook for about 8-10 minutes, stirring occasionally, until they soften and release their juices
  3. Mash gently with a fork or potato masher to your desired texture
  4. Stir in chia seeds, lemon juice and sweetener if using
  5. Simmer 2-3 more minutes then remove from heat
  6. Let cool, it will thicken as it cools down
  7. Keep in the refrigerator for up to 7 days

 

 

Goes well with:

-Yogurt and peanut butter

-Cottage cheese

-Spread on bread
