White beans and cauliflower dinner

 Ingredients

 

Herb Oil

1 Tablespoon Italian seasoning

1 Tablespoon herbs de Provence

2 garlic cloves

Juice of 1/2 lemon

2 tablespoons olive oil

Pinch of sugar

1/3 teaspoon salt

Pinch of pepper

 

Beans

2 tablespoons olive oil

2 garlic cloves, minced

2 cans cannellini beans, rinsed and drained

1/2 C water or stock

Salt and pepper to taste

 

Cauliflower

1 cauliflower head in flowerets

Salt and pepper to taste

1 cup parmesan cheese, grated

 

Instructions

 

  1. Preheat oven to 450F
  2. Place cauliflower on a lined baking sheet, add olive oil, salt and pepper
  3. Mix all the herb oil ingredients in blender
  4. Roast cauliflower for 15 minutes
  5. To make the beans: In a 10-inch skillet heat olive oil over medium-low heat and cook the garlic until translucent. Add beans and season with salt and pepper. Add water or stock and bring to a gentle simmer. Cook until sauce becomes creamy and is reduced by half, 1-2 more minutes.
  6. Once cauliflower is done, sprinkle with parmesan cheese and roast another 10 minutes until the cheese melts.
  7. Serve beans with a drizzle of the herb oil and the cheesy cauliflower on the side.
