Baked Oatmeal

Ingredients

 

2 cups rolled oats

1 tsp cinnamon

1 tsp baking powder

¼ tsp salt

2 overripe bananas, mashed

1½ cups milk or any unsweetened milk alternative 

¼ cup peanut butter

2 tbsp maple syrup

1 large egg

1 tsp vanilla extract

 

Directions

 

1.Preheat oven to 375°F (190°C).

2.In an 8x11-inch baking dish, combine oats, cinnamon, baking powder, and salt.

3.In a mixing bowl, mash bananas and whisk in milk, peanut butter, maple syrup, egg, and vanilla.

4.Pour wet mixture over dry ingredients and stir to combine.

5.Bake uncovered until the top is golden and the mixture is set, about 30–35 minutes.

6.Let cool slightly before serving.
